How I came to make Christmas caponata burgers this week….
My week started with attending the successful launch of Marisa Raniolo Wilkins' (check out Marisa’s blog: All Things Sicilian and More)– Sicilian Seafood Cooking (New Holland) at CoAsit – the Italian Historical Society of Museo Italiano in Carlton Melbourne.

Richard Cornish (The Age, Epicure) launched Marisa’s beautiful book, which I styled. Sydney based photographer – Graeme Gillies shot the food. Bob Evan, took the exquisite location shots of Sicily.
Richard spoke of the utmost importance of these recipes to be learnt, passed on and practiced. He also made mention of not knowing there were so many caponatas – there are nine featured in Marisa’s book! The one I made from the book for the launch was: Caponata di natale (Christmas caponata), a celery based caponata with green olives, capers, sultanas and roasted almonds tossed in a sweet and sour dressing – fresh, crunchy, very tasty and oh so yum.
I hope you don't mind Marisa - I had some caponata left over and decided to add it to some lean beef mince. They turned out to be DELICIOUS burgers. I grilled some sourdough rolls, topped with caramelised onions and homemade peach chutney (which I had made for the ‘Sumner House’ Spring Market – this will be held next Wednesday 16 November 2011 behind the Coolibah Centre which is behind the Head Office of the Brotherhood of St. Laurence 67 Brunswick Street Fitzroy 12 – 3pm).
